Burgers_and_Red_Salsa

Serves: 4

Ingredients:

4 beef burgers, fried of grilled

4 ripe tomatoes 2 red ramirl peppers 1 small red onion 1 clove of garlic, crushed 1 tsp ground cumin 1 small red chilli (optional) lime juice to taste salt pepper fresh coriander

Halve the tomatoes, scoop away the seeds and chop into dice and place in a bowl. Finely chop both red onion and crushed garlic and add tho the tomato, together with the ramiro peppers once you’ve trimmed and seeded them and cut into small dice.

Squeeze overa little lime juice-careful because it ca be overwhelming-taste and add olive oil. Chilli is optional so if your using it, seed it and very finely chop before aadding with ground cumin, salt and pepper to taste. Cover and refrigerate for a couple of hours to allow the flavours to mellow and develop before finally adding a good handful of freshly chopped coriander leaves. Serve immediately with burger and bun.
