-------------------------------- Mediterranean_Couscous_Salad.rst -------------------------------- Serves- 8 Ingredients: 1 13-oz can low sodium vegetable or chicken broth 1 cup dry whole-wheat couscous 1 10-oz can chickpeas, drained 1 cup sliced scallions 1 cup (4 oz) crumbled feta cheese 1 2-oz can sliced ripe olives, drained ½ cup italian vinaigrette dressing Shredded lettuce In a medium saucepan, bring broth to a boil. Stir in couscous, remove from heat and let stand for 5 minutes. Transfer couscous to a large bowl, fluff with a fork and let stand for another 5 minutes. Fluff again. Stir in chickpeas, scallions, feta and olives. Toss with dressing and serve on shredded lettuce.
